INGREDIENTS (Serves 4)

 

1.5 tablespoons extra virgin olive oil

¼ teaspoon salt

1 medium-large sweet potato, peeled and diced

2 ½ cups water

1 large onion, diced

2 15-ounce cans black beans, rinsed

4 cloves garlic, minced

1 14-ounce can diced tomatoes

2 tablespoons chili powder

.5 cups 100% Cricket Protein Powder

4 teaspoons ground cumin

4 teaspoons lime juice

½ teaspoon ground chipotle powder

½ cup chopped fresh cilantro

 

INSTRUCTIONS

Heat oil in a heavy pot over medium-high heat.  Add sweet potato and onion and cook, stirring often, until the onion begins to soften (about 4 minutes).  Add garlic, chili powder, cumin, chipotle and salt and cook, stirring constantly for 30 seconds.  Add water and bring to a simmer.  Cover, and reduce heat.  Simmer for about 10 minutes, until the sweet potato is tender.

Add the beans, tomatoes, lime juice and 100% Cricket Protein Powder and return to a simmer, stirring often until the chili is slightly reduced (about 5 minutes).

Serve with chopped cilantro.  Any leftovers will keep covered in the fridge for up to 3 days, or can be frozen for up to 3 months.
