Flourish Farm Protein Packed Super Human Chili

Flourish Farm Protein Packed Super Human Chili

100% Cricket Protein Powder together with sweet potatoes and black beans for a delicious comfort food for super humans!

Make a double batch of this delicious chili and enjoy it all week or stick the extras in the freezer.

Sweet Potatoes are loaded with vitamins, minerals, fiber, and phytonutrients.  The vitamin A in sweet potatoes is excellent for eye health and supports immunity.  Sweet potatoes are also a low-glycemic food and high in fiber, vitamin C, manganese and vitamin K.

By using cricket protein powder in your chili instead of beef you’ll be choosing a protein source that uses substantially fewer resources.  Pound of pound, cricket protein offers two times more protein than beef, while using 90% less water, consuming 80% less feed, and emitting virtually no green house gasses.  And the nutty, mild flavor of Flourish Farm’s 100% Cricket Protein Powder blends easily into this recipe.

Consider this a base recipe and adjust to your own flavor preferences.  Want more heat? Add chopped jalapeños.  Have an abundance of frozen corn in the freezer? Add it for more sweetness.  Cinnamon and nutmeg can also be added to deepen the flavors.  Share your adjustments in the comments!

1.5 tablespoons extra virgin olive oil

¼ teaspoon salt

1 medium-large sweet potato, peeled and diced

2 ½ cups water

1 large onion, diced

2 15-ounce cans black beans, rinsed

4 cloves garlic, minced

1 14-ounce can diced tomatoes

2 tablespoons chili powder

.5 cups 100% Cricket Protein Powder

4 teaspoons ground cumin

4 teaspoons lime juice

½ teaspoon ground chipotle powder

½ cup chopped fresh cilantro

Heat oil in a heavy pot over medium-high heat.  Add sweet potato and onion and cook, stirring often, until the onion begins to soften (about 4 minutes).  Add garlic, chili powder, cumin, chipotle and salt and cook, stirring constantly for 30 seconds.  Add water and bring to a simmer.  Cover, and reduce heat.  Simmer for about 10 minutes, until the sweet potato is tender.

Add the beans, tomatoes, lime juice and 100% Cricket Protein Powder and return to a simmer, stirring often until the chili is slightly reduced (about 5 minutes).

Serve with chopped cilantro.  Any leftovers will keep covered in the fridge for up to 3 days, or can be frozen for up to 3 months.
