Cricket Protein Powder meets Pumpkin Spice

You can barely turn around without bumping into pumpkin spice something these days.  But these Pumpkin Energy Balls with 100% Cricket Protein deliver the health benefits of the season’s star squash—which include high levels of Beta Carotene, Vitamin B6, Folate, and Iron--with just a dash of maple syrup for sweetness.  

Pepitas (shell-less pumpkin seeds), almonds, hemp hearts and 100% Cricket Protein Powder make these tasty balls protein powerhouses.  Protein helps you feel fuller longer, slows digestion, and promotes muscle repair and growth, making these a great choice whether you are trying to stave off holiday-season weight gain, or recovering from an intense hike in the beautiful fall foliage!

Ingredients (makes about 24 balls)

 

¾ cup pepitas

2 teaspoons cinnamon
3/4 cup almonds 1 teaspoon ginger
1 cup chopped, pitted dates 2 teaspoons vanilla extract
1/2 cup rolled oats 1 teaspoon maple syrup
1/4 cup hemp hearts 1/2 cup 100% Cricket Protein Powder 
1 cup pumpkin puree

 

Instructions

Put almonds and pepitas in a food processor or high-speed blender and process until well ground.  Transfer to a bowl.

Add dates, oats, hemp hearts, and spices to the food processor and process until well chopped.

Add pumpkin puree, vanilla extract, and maple syrup and pulse a few times.

Add nut and seed mixture and 100% Cricket Protein Powder and process until well-mixed.   Scrape the sides of the bowl a few times to ensure the mixture is well-blended.

Before rolling into balls, taste mixture and adjust to your liking.  It can also be helpful to place the mixture in the fridge for half an hour or so after mixing and before handling.

Form into balls and freeze on a baking sheet.  If you’d like you can roll the balls in additional chopped pepitas before freezing.  

Transfer to a bag or storage container and store in the freezer.
