Flourless Banana Protein Pancakes

These protein cakes are paleo-friendly, low-carb, low-sugar, easy to make, packed with 30 grams of protein (!!) per serving and so delicious.  In fact, go ahead, have them on a Tuesday because they're almost too healthy for the weekend.

Recipe serves one person.


One and a half ripe bananas 1/4 teaspoon ground cinnamon
Two eggs 1/8 teaspoon baking powder
1/2 teaspoon vanilla extract 3 Tablespoons 100% cricket powder



1. Mash bananas in a bowl

2. Whisk eggs and add to bananas along with vanilla extract, cinnamon, baking powder, and 100% Cricket Protein Powder.  Stir to combine.

3. Pour batter to form small pancakes onto a skillet over medium-low heat.  Smaller pancakes are easier to flip; heat level may need to be adjusted based on your stove.

4. Cook for 1-2 minute and flip to cook for another 1-02 minutes (times may vary depending on heat level and size of pancakes).

5. Serve immediately and top with maple syrup and fresh fruit.  Any extras can be refrigerated (or frozen!) and pooped in the toaster.  Spread with peanut butter for a healthy snack.
